You should really use some kind of archive software along with your CD-R, or whatever media you go with. I am using Retrospect Express and DVD-R (Superdrive) with great results. Archive software will make your life much easier as it builds a database as you go. If you back up a project today, then work on it some more next week, the archive software will recognize the new files and back those up without having to back up the entire project again. Also as it fills up a CD (or DVD etc.) it will ask for a second and third etc. until the project is backed up. You don't have to worry about witch files are on wich disc. Mezzo Media is another popular archive program.
If you have a .Mac account then try using Apple's 'Backup' software. It automatically spans multiple CD-Rs or DVD-Rs. The only backup software I am aware of that can do this. Retrospect creates an archive file that must be restored back to a hard drive with Retrospect before you can use the files. 'Backup' creates a regular mac volume that can be browsed and accessed just like a hard drive. Worth the price of .Mac for this alone.
We've been using Retrospect for years now. First we were using DDS 4mm tapes, but we've switched to DLT for speed and network backups. You've got to backup! Trust me....
DDS-3 w/Retrospect on a daily basis (set up scripts to back up every folder that needs it) then at the end of a project, drag the entire thing to a Granite Digital hot swap drive for archiving. Two backups on 2 different media malcolm

Spend $160 and get yourself a 40G Firewire drive with a 911 chipset and use it to backup your sessions. Not only will it do it faster than anything else, it is portable and allows you to bring your backed up sessions basically anywhere. I use a bunch of these, and have NEVER had a problem. Here's a link to where I get mine:
