2002 V70 Low coolant warning light?

1 Check the coolant level if it is low check for any leak. 2 If the level is right and there is no leak check the level sensor it might moved from the place where has to be reinsert it. It is located under the expansion tank.In the picture under #27 3 If the sensor is properly inserted but still have the warning light the it is out of order replace.

Why not just top it up and give it a few days and then check the level again. You may not have a leak at all, after all the level was only on the min mark. Your coolant level will drop as the engine warms up and the system gains pressure. So if you top up with water to the max and check where it sits at running temperature all should be well.
